Whether you're using a Weber BBQ or your go-to kitchen cookware, these steps ensure your fillet medallions stay tender, juicy, and beautifully seared.
Before You Begin
- Bring your 250 gm Wagyu Eye Fillet to room temperature
- Have olive oil spray, sea salt flakes, and a knob of butter ready
- Preheat your BBQ or pan to 220°C
How to Cook the Perfect Fillet Medallions
- Prep the Grill & Fillet
Spray the preheated grill with olive oil. Lightly coat your Eye Fillet medallions in olive oil and season generously with sea salt flakes. - Build the Sear
Place the fillet on the grill, salted side down.
Spray the top with olive oil, season again, and sear just long enough to develop a solid crust.
Rotate and repeat until all surfaces have an even, golden sear.
At this stage, you are only searing — not cooking through. - Add Butter & Bake
When you are happy with the sear close the lid and cook for 3 minutes. After 3 minutes flip the medallion, add a knob butter and cook for another 3 minutes. - Check for Doneness
When gently pressed, the medallions should feel firm but not rubbery, with clear juices beginning to appear. - Rest & Enjoy
Rest the Eye Fillet medallions for 2 minutes before slicing.
Serve immediately — and enjoy Wagyu at its finest.
