Perfect Wagyu Scotch Fillet Cooking Guide (Medium Rare)

Whether you're cooking on a Weber BBQ or your everyday kitchen cookware, these steps ensure your Scotch Fillet stays tender, juicy, and beautifully seared.

 

Before You Begin

  • Bring your 250 gm Wagyu Scotch Fillet to room temperature
  • Have olive oil spray, sea salt flakes, and a knob of butter ready
  • Preheat your BBQ or pan to 220°C

 

How to Cook the Perfect Scotch Fillet

  1. Prep the Grill & Fillet
    Spray your preheated grill with olive oil. Lightly coat the Scotch Fillet in olive oil and season generously with sea salt flakes.
  2. Build the Sear
    Place the fillet on the grill, salted side down.
    Spray the top with olive oil, season again, close the lid and cook for 3 minute.
     Flip, add a Knob of butter and cook for another 3 minutes with the lid closed. 
  3. Check for Doneness
    When gently pressed, the Scotch Fillet should feel firm but not rubbery, with clear juices beginning to surface.
  4. Rest & Enjoy
    Let the fillet rest for 2 minutes before slicing.
    Serve immediately — and enjoy Wagyu at its finest.
